I spend a fair amount of time lurking on Facebook, and recently I was accidentally introduced to Tastefully Simple. How do you accidentally get introduced to something on Facebook, you ask? Well, a friend of my sister’s had just had a baby girl; when I found her Facebook page to see a picture, I discovered that she was also a Tastefully Simple consultant. I remember thinking, Oh, that’s nice, and letting it go. Later on, I made a new friend in a moms’ group on Facebook when she shared that she, too, was a consultant. Heather, the lovely lady that she is, kindly sent me a few samples upon learning about my interest in, and lack of experience with, Tastefully Simple.
One of the samples — the one I was most excited to try — was the Absolutely Almond pound cake mix. Obviously, anyone with nut allergies should steer clear of this, as it not only contains almonds but is also manufactured in a facility that processes soy and tree nuts. That being said, those of us lucky enough to not have nut allergies (and we truly are lucky!) can, and should, enjoy this cake!
I should probably mention now that TS truly lives up to their name, both in terms of the ingredients needed and with the preparation!
Check it out. This is all you need:
1 bag pound cake mix
1 cup water
1 1/2 sticks (3/4 cup) butter, melted
No kidding. That’s it. This isn’t rocket science — it’s called Tastefully Simple for a reason!
So here we go…
Being the attention-divided, overtired mom that I am, I messed up right off the bat, but I didn’t realize it until I was mixing the ingredients. The recipe calls for 1 1/2 sticks of melted butter, but I accidentally melted two whole sticks. I was initially worried that I’d ruined the batter, but I didn’t. More on that later.
So melt your butter, and then combine all of the ingredients in a large bowl and blend them well.
Pour the prepared batter into a greased 9″x5″ baking dish and let it bake at 325* for 50-55 minutes. (Because I put in too much butter, I baked mine for an hour.)

Waiting is always the hardest part, isn’t it? My house was starting to smell really good at this point and I found myself growing impatient. Joshua whiled the time away by relaxing in the fridge. Yes, in the fridge. Don’t believe me?
Once the eternity — I mean, hour — of waiting finally ends, remove the pound cake from the oven and just take a minute to admire it. It’s truly a thing of beauty!
Now you have this gorgeous pound cake and now it’s ready to be eaten. You could just eat it as-is, but why would you? Jazz it up a little! Add some fruit and whipped cream, cut it up and make a trifle with it, or make yourself a really good cup of coffee to enjoy with it.
I’m a chocoholic, though. Before I even poured the mix out of the bag, I knew exactly what I’d do with the finished product: I was going to make it rain chocolate over the top, and Stonewall Kitchen was going to help me.
I’d like to introduce you to Stonewall Kitchen’s Dark Chocolate Toffee Sauce!
To make the sauce thin and smooth, I just scooped a few spoonfuls into a bowl, microwaved it for about 15 seconds, and gave it a good stir. Then, I just took a spoonful of sauce and swung the spoon over the pound cake. And then I did it again. And again. And again…
Okay, okay. Maybe I overdid it a little bit. But I told you I was a chocoholic!
At this point I just couldn’t take anymore. I cut myself a slice of cake and dug in!
The cake carried a wonderful almond scent that also translated into its flavor, and its texture was light and fluffy (even though I added too much butter!). I thoroughly enjoyed eating it, and am looking forward to having another slice! As for the sauce, it reminded me very much of a Skor or Heath bar; I could taste both the dark chocolate and the toffee, but neither overpowered the other. The flavors were balanced and delicious!
Preparing this one recipe made a believer out of me, and I signed up to be a Tastefully Simple consultant! I’m so excited to be entering into this new project, and I can’t wait to see where it takes me! I hope there are some big things ahead for my family and me. This is going to be an adventure!
